Operation is extremely easy. You simply must break the egg on a flat surface and apply the instrument on the top of the albumen (usually 1 cm of the yolk) until the probe comes into contact with it. To determine the quality of Haugh units you should apply the following formula: Hu = 100 * log (h - 1.7 * p0.37 +7.57) Where: Hu = Egg quality in Haugh units p = egg weight in grams h = height of the albumen in mm The result should be a value between 20 and 110 Haugh units. |
